Mile High Zucchini Bread - cooking recipe

Ingredients
    2 c. sugar
    1 c. vegetable oil
    3 eggs
    1 tsp. vanilla extract
    3 c. flour
    1 tsp. salt
    1 tsp. baking soda
    1 tsp. cinnamon
    2 c. shredded unpeeled zucchini
    3/4 c. chopped walnuts
Preparation
    Beat sugar, oil, eggs and vanilla in a mixing bowl until fluffy.
    In a separate bowl, mix flour, salt, baking powder and cinnamon.
    Add to egg mixture and mix on medium speed until blended.
    Stir in zucchini and nuts.
    Pour into a greased 9 x 5 x 3-inch loaf pan.
    Bake at 350\u00b0 for 1 hour and 10 minutes or until toothpick comes out clean.
    Cool before wrapping.
