Ingredients

1 c. margarine
2 c. sugar plus 2/3 c. sugar, divided
1/2 tsp. salt
1 egg
1 c. persimmon pulp
2 1/2 c. flour
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
4 tsp. cinnamon
Preparation

Cream margarine, 2 c. sugar, and salt.
Add remaining ingredients, except for cinnamon.
Mix well.
Dough is easier to handle if chilled overnight.
Drop by spoon fulls and roll into a mixture of remaining 2/3 c. sugar and cinnamon.
