Twice Baked Potatoes - cooking recipe

Ingredients
    4 baking potatoes, scrubbed and dried
    1 tsp. oil
    1/2 tsp. salt
    2 Tbsp. snipped chives
    1/2 tsp. black pepper
    1/2 c. sour cream
    1 c. (4 oz.) grated cheese
    2 Tbsp. unsalted butter, softened at room temperature
    6 strips crisp bacon, crumbled
Preparation
    Preheat oven to 425\u00b0.
    With fork, pierce each potato.
    Rub potatoes with oil.
    Sprinkle with 1/8 teaspoon salt.
    Bake 1 hour. Reduce oven to 350\u00b0 (can be microwaved).
    Remove potatoes from oven; with knife, cut an X in top of each, then cool enough to handle.
    Fold back skin where X was cut.
    With spoon, carefully scoop out the potato into a large bowl, leaving enough flesh to make a potato shell.
    With potato masher, mash potatoes.
    Add 1 teaspoon chives to mixture.
    Add remaining salt, pepper, sour cream, 1/2 cup cheese and butter; mix well.
    Stuff each potato shell with mixture.
    Sprinkle with remaining cheese and bacon. Place potatoes on baking sheet.
    Bake 20 minutes or less.
    Sprinkle with remaining chives.
