Enchiladas - cooking recipe
Ingredients

1 lb. ground chuck
1/2 tsp. liquid smoke
1 pkg. corn shells
6 green onions, chopped
1 pkg. enchilada mix (McCormick)
1 can tomato paste
1 c. Monterey Jack cheese, grated
1 c. Cheddar cheese, grated
Preparation

Cook ground beef, then drain off the grease.
Mix sauce with one cup of water and tomato paste and boil (on back of package). Put 1/2 cup of sauce on corn shells.
Fill shells with about 2 tablespoons of meat, about 1 teaspoon of cheese and 1 teaspoon of onion.
Roll with seam down.
Place rolled shells in pan.
Cover the shells with the remaining sauce.
Top with 1/2 cup cheese and about 2 tablespoons of onions.
Bake for 15 to 20 minutes at 350\u00b0.
