Tennessee Chess Pie - cooking recipe
Ingredients

1/2 c. softened butter
2 c. sugar
2 Tbsp. corn meal
1/4 tsp. salt
4 eggs
1/4 c. lemon juice
1 Tbsp. grated lemon peel
1 (9-inch) unbaked pie shell
Preparation

Preheat oven to 375\u00b0.
Cream together butter and sugar until fluffy.
Beat in corn meal and salt.
Add eggs one at a time and beat well.
Beat in lemon juice and peel.
Turn into shell.
Bake on lowest shelf of oven for 35 minutes until filling is golden brown.
Should not be firm.
Cool to room temperature.
This is like the filling of a pecan pie without the nuts.
Served 10 to 12.
