Garbanzo Stuffed Peppers - cooking recipe
Ingredients

1/2 c. dry garbanzo beans, cooked and mashed
1/4 c. onion, chopped
1/4 c. celery, chopped
1 c. no-salt tomatoes
1/4 tsp. basil
1/2 tsp. chopped parsley
4 oz. part skim Mozzarella cheese
4 bell peppers, seeded
Preparation
-
Saute onion and celery.
Stir in tomatoes, beans, basil and parsley.
Reserve some cheese for topping on peppers, and add remaining cheese to mixture.
Fill peppers.
