Ingredients

1/4 c. sugar
2 tsp. cornstarch
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. hot beet juice
1/4 c. vinegar
1 lb. can sliced beets, drained
Preparation

In a 2-quart saucepan, combine sugar, cornstarch, salt and pepper.
Add beet juice and vinegar.
Simmer, uncovered, over low heat; stir until clear and thickened, about 5 minutes.
Add beets and heat until hot. Yield: 4 servings.
