Tennessee Baked Ham - cooking recipe
Ingredients

1 (10 to 12 lb.) country ham
4 c. yellow cornmeal
1 c. firmly packed dark brown sugar
1 Tbsp. pepper
water
Preparation

Soak ham overnight in cold water.
Drain and wipe dry.
Mix cornbread with brown sugar and pepper.
Add enough water to make a clay-like paste.
Put ham in a shallow baking pan.
Cover ham with cornmeal paste, making shell about 1-inch thick.
Roast in preheated moderate oven at 350\u00b0 for 4 hours or until meat registers 170\u00b0 on thermometer.
Add a little boiling water to pan but do not taste.
Remove from oven.
Strip off paste and skin. Sprinkle ham with dry bread crumbs.
Replace in oven and bake until brown.
