Jodi'S Favorite Heart-Smart Zucchini Bread - cooking recipe

Ingredients
    3/4 c. egg substitute
    2 c. sugar
    2 c. grated zucchini
    3 c. flour
    1/2 tsp. baking powder
    1 c. raisins (optional)
    1 c. safflower oil
    3 tsp. vanilla
    3/4 tsp. or less salt
    1 tsp. soda
    3 tsp. cinnamon
    safflower margarine
Preparation
    Using low speed of electric mixer, combine egg, oil, sugar, zucchini and vanilla.
    In separate bowl, combine remaining ingredients.
    Gradually add to zucchini mixture; blend evenly. Pour into 2 greased loaf pans (use safflower margarine to grease pans).
    Bake at 350\u00b0 for 1 hour.
    Yields 2 loaves.
