Curried Chicken Breast - cooking recipe

Ingredients
    3 boneless skinless chicken breast halves
    1 Tbsp. margarine
    1/3 c. orange juice
    1 tsp. dried minced onion
    1 tsp. curry powder
    1/2 tsp. ground coriander
    1/2 c. seedless green grapes, halved
    1 Tbsp. apricot jam
Preparation
    Cook chicken breasts in margarine for 5 minutes or until brown, turning once.
    Add orange juice, onion, curry and coriander.
    Bring to boiling.
    Reduce heat.
    Cover and simmer 5 minutes or until chicken is tender and no longer pink.
    Transfer chicken to heated serving platter, cover to keep warm.
    Over medium heat, bring pan juices to boiling.
    Stir in grapes and jam.
    Serve juices and chicken over rice.
    Makes 3 servings.
