Tabboulehlebanese Wheat Salad - cooking recipe
Ingredients

3/4 c. medium-grain bulgur (cracked wheat)
2 c. finely chopped flat-leaf parsley
1/2 c. chopped fresh mint leaves
1/2 c. chopped green onions
2 or 3 tomatoes, diced
1 lemon
1/2 c. extra-virgin olive oil
salt and pepper to taste
Preparation

Rinse bulgur well and cover with fresh cold water to soak for about 30 minutes while you chop the vegetables.
When bulgur grains are nicely plump, drain them, squeezing out as much water as you can between your hands.
