Arroz Con Pollo - cooking recipe

Ingredients
    1 (3 1/2 lb.) broiler-fryer, cut up
    1 tsp. salt
    1/8 tsp. pepper
    1/8 tsp. paprika
    1/4 c. olive oil
    1 c. sliced mushrooms
    1 medium onion, chopped
    1 large clove garlic, minced
    3 1/2 c. chicken broth
    1 (28 oz.) can tomatoes, chopped
    1/2 tsp. crushed oregano leaves
    1/4 tsp. crushed saffron*
    1 bay leaf
    2 c. raw regular long grain rice
    1 (10 oz.) pkg. frozen peas
    1/4 c. pimento strips (optional)
Preparation
    *I substitute turmeric for saffron.
