Lee Fennel'S Potato Soup - cooking recipe

Ingredients
    1 small onion, chopped
    7 to 8 medium potatoes, cubed
    1/2 stick butter
    3 Tbsp. flour
    1/2 tsp. salt and pepper to taste
    2 c. milk
    6 oz. Velveeta cheese
    1/2 tsp. chopped chives
Preparation
    In saucepan, boil potatoes in just enough water to cover plus salt and pepper.
    In another large pot, melt the butter and cook onion, then stir in flour.
    Mix well.
    Add milk and cheese.
    Stir until melted.
    Add cooked potatoes.
    Simmer 10 minutes and serve. Increase cheese if you like it thicker.
