No-Fat Beans - cooking recipe

Ingredients
    1 lb. dried beans
    1 qt. defatted beef stock or water
    2 cloves garlic, minced
    1 onion, diced
    2 to 3 drops smoke flavoring
    salt and pepper to taste
Preparation
    Pick over and rinse beans.
    Put in 4-quart pot with water to cover.
    Bring to a boil. Cover and remove from heat.
    Let stand for 10 minutes. Drain.
    Add stock or water.
    Bring to a boil. Turn heat to medium-low and simmer 1 1/2 to 2 1/2 hours until tender.
    Add remaining ingredients halfway through cooking time.
