Carrot-Pineapple Cupcakes(Makes 8 Cupcakes) - cooking recipe
Ingredients

1 c. whole wheat flour
1/3 c. sugar
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. nutmeg
1/8 tsp. salt
1 egg, beaten
1/4 c. oil
1 c. shredded carrots
1/2 c. crushed pineapple (juice pack), drained
1 tsp. vanilla
Preparation

Preheat oven to 350\u00b0.
Place paper baking cups in muffin tins. Mix dry ingredients thoroughly in mixing bowl.
Add remaining ingredients; mix well.
Fill baking cups two-thirds full.
Bake 20 minutes or until top springs back when touched lightly.
