Red Jambalaya - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 1/2 c. onion, chopped
    1/2 c. bell pepper, chopped
    1/2 c. green onion, chopped
    1/2 c. parsley, chopped
    1 c. tomato paste
    1/4 c. garlic, chopped
    1/4 tsp. dried mint
    1 1/2 c. long grain rice
    2 tsp. salt
    1 Tbsp. hot sauce
    2 lb. smoked sausage, sliced
Preparation
    In a large skillet, saute on medium heat the
    onion, bell pepper and green onion in olive oil.
    In a 5-quart covered pot, add ingredients from skillet, then add the remaining ingredients. Cover with water 1/2 inch over.
    Cover and cook most of water out, but leave moist.
