Marion'S Muffins(Yields 12 Muffins) - cooking recipe
Ingredients

1/2 c. raisins
3/4 c. all-purpose flour
1/2 c. oat bran
1/2 c. packed brown sugar
1/2 c. rice bran
1 tsp. ground cinnamon
1/2 tsp. baking soda
1/8 tsp. ground allspice
1/3 c. mashed banana
1/4 c. skim milk
2 lightly beaten egg whites
2 Tbsp. cooking oil
1/2 tsp. vanilla
1/2 c. shredded carrots
Preparation

Pour enough boiling water over raisins to cover.
Let stand 5 minutes; drain well.
Set aside.
In large mixing bowl, stir together flour, oat bran, brown sugar, rice bran, baking powder, cinnamon, baking soda and allspice.
Make a well in the center. In medium mixing bowl, combine mashed banana, milk, egg whites, cooking oil and vanilla.
Add all to flour mixture.
Stir just until moistened.
Fold in raisins, carrots and nuts.
Lightly grease muffin cup or line with paper bake cups.
Fill 2/3 full. Bake in 400\u00b0 oven for 18 to 20 minutes.
