Christmas Brittle - cooking recipe

Ingredients
    3 c. sugar
    1/2 c. light corn syrup
    1 c. water
    1/4 c. butter, cut into pieces
    1 tsp. salt
    1 (16 oz.) jar unsalted dry roasted peanuts
    1 1/2 tsp. baking soda
    1 tsp. vanilla extract
Preparation
    Grease 2 cookie sheets and keep warm in 200\u00b0 oven.
    In large saucepan, combine the sugar, corn syrup and 1 cup water.
    Cook over medium heat, stirring constantly, until a candy thermometer reaches 240\u00b0 (soft ball stage).
    Stir in butter, salt and peanuts.
    Keep cooking, stirring constantly, until mixture reaches 300\u00b0.
    Combine soda, 1 teaspoon water and vanilla.
    Remove saucepan from heat; stir in soda mixture.
    Quickly spread half of mixture in each pan. Spread with a spatula 1/4-inch thick.
    Cool and break into pieces. Yields about 2 1/2 pounds.
