Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant, peeled & cubed
    1 (8 oz.) pkg. mozzarella cheese, shredded
    1 (15 oz.) jar marinara sauce (or your favorite spaghetti sauce)
    1/3 c. grated parmesian cheese
Preparation
    Cook eggplant in boiling water 5 minutes - drain.
    Place in lightly greased 1 1/2 qt. casserole; add mozzarella cheese & top with marinara or spaghetti sauce.
    Bake at 350 degrees for 30 minutes.
    Sprinkle with parmesan cheese & bake about 5 minutes.
