Polynesian Meatballs - cooking recipe

Ingredients
    1 lb. ground beef
    1 c. oatmeal (whole oats)
    1/4 c. minced onion
    salt and pepper to taste
    1 egg
    3/4 c. chopped green pepper
    1/2 c. chopped carrots
    1 (16 oz.) can pineapple chunks
    1 pt. cherry tomatoes
    2 cloves garlic, minced
    2 Tbsp. cooking oil
    1/2 c. sugar
    1/2 c. red wine vinegar
    2 Tbsp. soy sauce
    2 tsp. instant chicken bouillon granules
    4 Tbsp. cornstarch
    hot, cooked rice
Preparation
    Make meatballs:
    Combine egg, oats, salt, pepper, meat and minced onion.
    Mix thoroughly.
    Form into 1-inch balls.
    Brown meatballs on all sides until no pink shows in center.
    Combine peppers, carrots and garlic; cook in oil until tender.
    Add sugar, vinegar, soy sauce, bouillon, pineapple (include juice) and 2 cups water.
    Add tomatoes.
    Bring to a rapid boil for 1 minute.
    Mix cornstarch in 1/4 cup cold water and stir into hot mixture until thick and bubbly.
    Just before serving, add cooked meatballs to sauce and stir.
    Serve over rice.
    Serves 6.
