Rice And Black Bean Salad - cooking recipe
Ingredients

1 (6.9 oz.) pkg. Rice-A-Roni chicken flavor, cooked as directed and cooled
1 (16 oz.) can black beans, drained and rinsed
1 medium red bell pepper, chopped finely
1 medium green pepper, chopped finely
4 green onions, chopped
1/4 c. minced fresh cilantro
1/3 c. peanut oil
1/4 c. fresh lime juice
salt and pepper
Preparation

Combine the first 6 ingredients in large bowl.
Whisk together oil and lime juice in small bowl.
Pour over rice mixture; toss to coat.
Season with salt and pepper.
Line large bowl with lettuce; mound salad in bowl.
Garnish with sliced avocado and papaya and serve.
(Should be made several hours ahead or refrigerated overnight for best flavor.)
