Raised Donuts(Part I) - cooking recipe

Ingredients
    4 eggs
    1/4 lb. shortening (lard; 4 oz. melted equals 1/2 c.)
    1/2 lb. sugar (8 oz. equals 1 c.)
    1 yeast cake dissolved in 1/4 c. warm water
    1 1/2 pt. warm milk (3 c.)
    2 lb. plus 12 oz. flour (weigh)
Preparation
    First dissolve yeast cake in warm water; set aside.
    Beat eggs, then add cooled melted lard; mix.
    Add sugar; mix.
    Add yeast and warm milk.
    Beat with heavy spoon.
    Next add half the flour; beat.
    Remainder of flour; beat.
    Set to raise overnight. When done raising, flour a little.
    Roll and shape in doughnuts, then rise again and fry them in fat.
