Fresh Apple Bread - cooking recipe

Ingredients
    1 c. salad oil (lite)
    2 c. sugar
    3 eggs, beaten
    2 c. raw apples, diced
    1 c. nuts, chopped
    2 tsp. vanilla
    3 c. flour
    1 tsp. soda
    1 tsp. salt
Preparation
    Mix oil, sugar and eggs.
    Blend well.
    Add raw apples, nuts and vanilla.
    Beat well.
    Add flour, soda and salt.
    Mix well. Spoon into 2 (2 1/2 x 8-inch) loaf pans that have been lined with foil or wax paper.
    Bake at 350\u00b0 for 1 1/2 hours.
    At holiday time, add candied fruit to make it festive.
