Caribbean Fish Fillets - cooking recipe
Ingredients

6 to 8 scallions
2 Tbsp. olive oil
3 garlic cloves, minced or crushed
1 c. crushed tomatoes
1 Tbsp. tomato paste
1 tsp. oregano
1/4 tsp. pepper
1 large yellow squash
1 1/2 lb. haddock fillets or other firm-fleshed whitefish
Preparation

Coarsely chop the scallions.
In a large skillet, warm the oil over medium-high heat until hot.
Add the scallions and garlic and cook, stirring occasionally, until the garlic begins to brown. Add the crushed tomatoes, tomato paste, oregano and pepper and bring to a boil.
Reduce the heat to medium-low; cover and simmer for 10 minutes.
