Clam Chowder - cooking recipe

Ingredients
    1 onion, thinly sliced
    1 1/2 inch piece salt pork, cubed
    2 (10 1/2 oz.) cans minced clams
    2 c. diced and peeled potatoes
    1 tsp. salt
    1 c. water
    1/4 tsp. pepper
    1 qt. scalded milk
    2 Tbsp. butter
    3 Tbsp. flour to thicken as desired
Preparation
    Cook salt pork until crisp; drain.
    Saute onions in drippings. Pour off fat.
    In kettle, combine clam liquid with onions, salt pork, potatoes and water.
    Cover and simmer 10 minutes until potatoes are tender.
    Add clams and scalded milk and butter. Cover and set aside 1 or 2 hours.
    Just before serving, reheat and serve with crackers.
