Louisiana Red Beans And Rice - cooking recipe

Ingredients
    1 lb. red beans, washed, drained, soaked in water overnight and drained again
    3 c. water
    2 cloves garlic, chopped
    1/2 c. chopped celery
    1 medium onion, chopped
    1/2 c. cooking oil
    salt and pepper
    Cajun all-seasoning (optional)
    1 lb. smoked sausage, sliced
    ham (optional)
    steaming rice
Preparation
    Place beans in cold water in a 4-quart pot.
    Add garlic, celery, onion and oil and bring to a boil.
    Reduce heat and simmer for about 2 hours.
    Add water as needed, stirring occasionally. Add salt, pepper, sausage and Cajun seasoning and continue cooking over low heat for about 1 hour.
    Serve over a bed of steaming rice and enjoy!
