Diabetic - Walnut Macaroons - cooking recipe

Ingredients
    2 c. quick cooking rolled oats (uncooked)
    2 Tbsp. granulated sugar replacement
    1/4 tsp. salt
    2 tsp. vanilla extract
    1/2 c. liquid shortening
    1 egg, well beaten
    1/2 c. walnuts, very finely chopped
Preparation
    Combine oats, sugar replacement, salt, vanilla and liquid shortening in medium mixing bowl; stir to mix well.
    Cover and refrigerate overnight.
    Add beaten egg and chopped walnuts; stir to blend thoroughly.
    Pack a small amount of mixture level into teaspoon.
    Pat out onto ungreased cookie sheet.
    Bake at 350\u00b0 for 15 minutes.
    Yields 42 cookies.
