Yellow Squash Puffs - cooking recipe

Ingredients
    3/4 lb. squash (1 c. after cooked)
    1 egg, beaten
    1/3 c. flour
    1/3 c. corn meal
    1 tsp. salt
    1 tsp. baking powder
    1 medium onion, chopped
Preparation
    Cook squash in boiling water for 10 to 15 minutes or until tender.
    Drain, mash and measure 1 cup.
    Combine squash and egg. Stir well.
    Mix dry ingredients and onion.
    Add squash mixture to dry ingredients and stir until all is well blended.
    Drop squash mixture by level tablespoonful into hot oil.
    Cook until golden brown, turning once.
    Drain well.
    Makes about 2 dozen.
