Mexican Sausage And Rice - cooking recipe
Ingredients

1 Tbsp. oil
1 lb. smoked sausage, sliced
1 small onion, chopped
1 small green pepper, chopped
1 pkg. frozen sweet corn, thawed (can use canned corn)
1 c. chicken broth
1 c. mild salsa
1 1/2 c. instant rice
1/2 c. shredded Cheddar cheese
Preparation

Heat oil in a large skillet.
Add thinly sliced sausage, pepper and onion.
Cook and stir until vegetables are tender.
Add corn, broth and salsa; bring to a boil.
Stir in rice; cover. Remove from heat.
Let stand for 5 minutes.
Fluff with fork. Sprinkle with cheese; cover.
Let stand for 2 to 5 minutes or until cheese melts.
