Pumpkin Roll Cake - cooking recipe

Ingredients
    3 eggs, beaten for 5 minutes
    1 c. sugar
    2/3 c. pumpkin
    1 tsp. lemon juice
    3/4 c. plain flour
    1 c. chopped nuts
    2 tsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. baking powder
    1 tsp. ginger
    1/2 tsp. salt
Preparation
    Grease and flour 15 x 10-inch cookie sheet. Add the eggs to sugar. Mix together pumpkin, lemon juice. Add to egg/sugar mixture. Add the flour, spices, baking powder and salt. Spread in pan and sprinkle with nuts on top. Bake at 375\u00b0 for 15 minutes. Turn out on towel with confectioners sugar. Roll into roll shape and cool. Re-roll and spread with mixture.
