Ingredients

2 c. flour
1 tsp. baking soda
1/4 tsp. salt
3/4 c. vegetable shortening
3/4 c. firmly packed light brown sugar
1 egg
1/2 tsp. vanilla
1/2 tsp. banana extract
2 mashed ripe bananas (1 c.)
Preparation

Combine shortening and brown sugar until light and fluffy.
Add egg, vanilla and banana extract.
Stir in bananas, then add flour, baking soda and salt.
Drop by teaspoonfuls onto greased cookie sheets.
Bake at 350\u00b0 for about 10 minutes.
Cool, frost with cream cheese frosting and top with chopped nuts.
