Chicken Or Turkey Fricassee - cooking recipe

Ingredients
    3 c. bite size meat
    3 Tbsp. butter or margarine
    1 medium onion, chopped
    1 1/2 c. chopped celery
    4 c. broth or 2 (14 oz.) cans chicken broth
    3 extra large eggs, beaten
    1 (10 1/2 oz.) can mushroom soup
    1 1/2 c. grated American or Cheddar cheese
    1 (8 oz.) box Ritz crackers, rolled fine
    1/2 tsp. pepper
    1/2 tsp. salt
Preparation
    Cook chicken in salted water; cover until done.
    Bone and cut into bite size pieces.
    Use leftover turkey this way, too.
    Remove fat from broth; measure broth to make 4 cups.
    Melt butter; add onion and celery; saute until onion is transparent.
    Combine chicken with onion and celery; add broth, eggs, soup, cheese, crackers, salt and pepper.
    Put mixture in shallow casserole, 9 x 13-inch.
    Bake uncovered in preheated 350\u00b0 oven about 1 hour or until bubbly.
    Serves 12.
