Mincemeat Refrigerator Cookies - cooking recipe

Ingredients
    3/4 c. shortening
    1 c. sugar
    1 tsp. vanilla
    1 tsp. grated lemon peel (optional)
    1 egg, beaten
    2 1/2 c. flour
    1/2 tsp. salt
    1/2 tsp. soda
    1 tsp. cinnamon
    1/2 c. mincemeat
    1/2 c. chopped nuts
Preparation
    Cream shortening and sugar.
    Add vanilla, lemon peel and egg. Add sifted dry ingredients alternately with mincemeat.
    Stir in chopped nuts.
    Shape in rolls.
    Chill 2 to 3 hours in refrigerator.
    Slice 1/4 inch thick.
    Bake on ungreased cookie sheet at 375\u00b0 about 15 minutes.
