Microwave Peanut Brittle - cooking recipe
Ingredients

1 c. dry roasted peanuts
1 c. sugar
1/2 c. dark Karo syrup
1 tsp. butter
1 tsp. vanilla
1 tsp. baking soda
Preparation

Stir together sugar and syrup in a 2-quart glass measuring cup.
Place in microwave and cook on High 4 minutes.
Stir well. Add peanuts and cook for another 3 1/2 minutes on High.
Add butter and vanilla to syrup, blending together.
Cook for 1 1/2 minutes on High.
Peanuts will be lightly browned and syrup will be very hot.
Add baking soda and gently stir until light and foamy.
Pour mixture onto aluminum foil and spread as thin as possible.
Let cool and break into small pieces.
Store in an airtight container.
