Portuguese Kale Soup (Couvres) - cooking recipe

Ingredients
    1 c. pea beans
    1 large onion, sliced
    1 lb. chourico (sausage), sliced
    1 lb. kale, cut
    1 Tbsp. vinegar
    2 c. sliced potatoes
    salt and pepper to taste
Preparation
    Soak beans overnight in cold water.
    Drain in the morning. Add onion, sausage, kale, salt, vinegar and 9 cups water.
    Bring to a boil, reduce heat and simmer 2 1/2 hours.
    Add potatoes and 1 cup water.
    Cook until potatoes are tender.
