Duff'S Fruit Bread - cooking recipe
Ingredients

1 1/2 c. corn meal
1 c. flour
20 oz. crushed pineapple
4 egg whites, beaten
2 c. nonfat milk
1 1/2 c. oatmeal
3 c. shredded carrot
1 c. raisins
4 tsp. baking powder
1 tsp. salt
2 tsp. soda
Preparation

Mix all together and beat with electric mixer for 4 minutes. Bake in 9 x 14-inch pan or two (5 x 9-inch) pans at 425\u00b0 until lightly brown and coming away from edge of pan.
Two cups of broken walnuts, pecans or almonds may be added, if desired.
