Gingered Sweet Potatoes - cooking recipe
Ingredients

3 large sweet potatoes (3 lb.)
1 c. sugar
2 eggs, beaten lightly
10 Tbsp. butter
1 1/2 tsp. grated orange rind
1/2 tsp. ground ginger
1/4 tsp. salt
1/4 tsp. pepper
1 Tbsp. finely minced crystallized ginger
1/4 c. flour
1 c. pecans
3/4 c. brown sugar
Preparation

Bake potatoes for 1 hour in 425\u00b0 oven.
Scoop out potato flesh and food process until pureed.
In large mixer bowl, place puree, sugar, eggs, 4 tablespoons of butter, orange rind, ground ginger, salt, pepper and crystallized ginger.
Blend well and spread in a greased 9 x 13-inch baking dish.
