Lemon Blueberry Oatmeal Muffins - cooking recipe

Ingredients
    2 Tbsp. quick oats, uncooked
    2 Tbsp. granulated sugar
    1 1/2 c. all purpose flour,
    1 1/4 c. quick or old fashioned oats, uncooked
    2/3 c. granulated sugar
    2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt (optional)
    1 c. plain nonfat yogurt
    1 egg white plus 1 egg, lightly beaten
    3 Tbsp. lemon juice
    2 Tbsp. vegetable oil
    1 tsp. grated lemon peel
    1 tsp. vanilla
    1 c. fresh or frozen blueberries (do not thaw)
Preparation
    Heat oven to 400\u00b0.
    Line 12 medium muffin cups with paper baking cups or spray bottoms only with cooking spray.
    For topping, combine the 2 tablespoons of oats and 2 tablespoons of sugar in a small bowl;
    mix well.
    Set aside.
