Green Chile Rice - cooking recipe

Ingredients
    vegetable cooking spray
    1/2 c. chopped onion
    2 c. cooked long grain rice, cooked without salt or fat
    1 (8 oz.) carton sour cream (nonfat)
    1 (4 oz.) can chopped green chiles, drained
    1/2 c. nonfat cottage cheese
    1/2 tsp. salt
    1/4 tsp. ground bay leaves
    1/4 tsp. pepper
    3 oz. shredded reduced fat sharp Cheddar cheese
Preparation
    Coat a skillet with cooking spray.
    Place over medium heat until hot.
    Add onions.
    Saute until tender.
    Stir in rice and next 6 ingredients.
    Add 1/2 Cheddar cheese.
    Spoon mixture into 1-quart casserole.
    Bake at 375\u00b0 for 30 minutes.
    Sprinkle with remaining cheese.
    Bake 5 minutes more.
