Mini Cheesecakes - cooking recipe

Ingredients
    2 (8 oz.) pkg. cream cheese, softened
    2 eggs, slightly beaten
    3/4 c. sugar
    1 tsp. vanilla
    1 tsp. lemon juice
    approximately 24 vanilla wafers
    cherry or blueberry pie filling
Preparation
    Mix cream cheese, eggs, sugar, vanilla and lemon juice together until smooth.
    Place vanilla wafers in cupcake papers in cupcake pans and spoon cream cheese mixture over wafers.
    Bake for 25 minutes in 350\u00b0 oven.
    Let cool.
    Refrigerate until ready to serve.
    Just before serving, add a spoonful of cherry or blueberry pie filling to each one.
