Chinese Fried Rice - cooking recipe

Ingredients
    1 c. long grain rice (3 c. cold, cooked rice)
    6 large eggs
    1/2 tsp. salt
    salad oil
    1/2 c. frozen peas, thawed and drained
Preparation
    Prepare rice as label directs.
    In a bowl with a fork, beat eggs and salt slightly.
    In a nonstick skillet over medium heat in 2 tablespoons of hot salad oil, gently stir rice until well coated with oil.
    Push rice to one side of skillet.
    In same pan over medium-high heat heat 1 tablespoon of oil until very hot; pour in eggs.
    Cook with spoon, stirring quickly and constantly until eggs are the size of peas and leave side of pan.
    Mix eggs with rice. Stir in peas; heat through.
