Crawfish Jambalaya - cooking recipe

Ingredients
    1 lb. crawfish tails
    1/2 c. butter
    2 Tbsp. garlic, chopped
    1 1/2 c. onion, chopped
    1/2 c. celery, chopped
    1/2 c. bell pepper, chopped
    1 can Ro-Tel tomatoes and green chilies
    1 tsp. salt
    1 tsp. black pepper
    1/2 c. parsley, chopped
    1/2 c. green onions, chopped
    3 c. cooked rice
Preparation
    Saute garlic, onion, celery and bell pepper in butter until wilted; add chopped Ro-Tel tomatoes.
    Simmer for 15 minutes.
    Add salt, pepper, crawfish tails, parsley and green onions.
    Cook just long enough to heat well.
    Mix with rice.
    Serve as a side dish. This is very highly seasoned with pepper.
    If you don't like it that hot, use less pepper and Ro-Tel tomatoes.
