Mashed Potato Fudge - cooking recipe

Ingredients
    1/3 c. mashed potatoes, cooled
    3 sq. chocolate
    3 Tbsp. butter
    1/8 tsp. salt
    1 lb. confectioners sugar
    1 tsp. vanilla
Preparation
    Melt chocolate and butter over hot water.
    Add mashed potatoes, salt and vanilla.
    Mix thoroughly.
    Blend in sugar. Knead until smooth and press into buttered 8-inch square pan. Cool.
    Cut into squares.
    Yields 1 1/4 pounds.
