Ardsheal House Cheese Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    3/4 c. chopped onion
    1/2 lb. Stilton cheese, crumbled
    1/2 lb. Cheddar cheese, crumbled
    1/3 c. flour
    3 c. chicken broth
    1 c. heavy cream
    1/3 c. dry white wine
    1 bay leaf
    salt and pepper to taste
    milk for thinning (if desired)
Preparation
    Heat the butter in a saucepan and saute onion until wilted. Add the crumbled cheeses, sprinkle on the flour and cook, stirring, about 2 minutes.
    Remove from stove and gradually add the liquids and seasonings.
    Return to heat and bring the soup to a boil, then simmer 5 to 10 minutes.
    Remove the bay leaf and thin the soup with a little milk if desired.
    Serves 8.
