Ingredients

1/2 lb. unsalted softened butter
1/2 c. granulated sugar
1 1/2 Tbsp. fresh grated lemon zest
1 tsp. vanilla
1/2 tsp. lemon extract
2 c. flour
1/4 tsp. salt
1 c. sweetened flaked coconut, toasted and cooled
confectioners sugar
Preparation

Cream the butter with the granulated sugar until light and fluffy; beat in lemon zest, vanilla and lemon extract.
Add flour and salt; beat mixture until it forms a dough.
Add coconut. Chill dough 1 hour.
Halve the dough on a sheet of wax paper. Form each half into an 8-inch log.
Chill the logs for 4 hours or overnight.
