Pineapple Upside-Down Cake(Cholesterol Free) - cooking recipe

Ingredients
    1/2 c. margarine
    2/3 c. brown sugar
    8 1/4 oz. can pineapple slices
    maraschino cherries
    1 c. baking mix
    3/4 c. sugar
    2 egg whites, beaten
    1/2 c. skim milk
    1 tsp. vanilla
Preparation
    Melt margarine in an 8-inch round microwave-safe dish. Sprinkle brown sugar over butter.
    Arrange pineapple and cherries on top.
    Mix remaining ingredients.
    Beat 3 minutes on low speed. Spread batter over fruit.
    Microwave on High for 7 to 9 minutes (ovens vary).
    Invert cake onto serving plate.
    Let stand over cake a few minutes.
    Serve warm.
