Marinated Carrots - cooking recipe

Ingredients
    2 lb. carrots
    1 c. tomato juice
    large onion (green, if desired)
    3/4 c. vinegar
    1 tsp. dry mustard
    1 c. sugar
    1/2 c. Wesson oil
Preparation
    Peel, slice and cook carrots until tender, drain and cool. Slice onions; mix well with carrots.
    Mix mustard and sugar together.
    Stir in oil, vinegar and tomato juice.
    Pour over carrots and onions.
    Cover and let stand 24 hours in refrigerator.
