Good Fortune Black-Eyed Peas - cooking recipe

Ingredients
    1 lb. black-eyed peas
    3 qt. water
    1/2 lb. salt pork
    2 Tbsp. onion, chopped
    1 Tbsp. jalapeno pepper, chopped
    2 tsp. sugar
    1 1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Wash peas thoroughly.
    In a large bowl, cover peas with 1 quart water.
    Cover; soak several hours.
    When peas are ready to cook, lightly brown pork in large heavy pot.
    Add 2 quarts water to pot.
    Drain peas; place in pot.
    Heat to boiling.
    Add remaining ingredients.
    Cover; simmer for 1 hour, or until peas are tender.
    Serves 6.
