Spinach Salad With Mushrooms And Bacon(Prep: 25 Minutes; Cook: None; Serves: 6 To 8) - cooking recipe

Ingredients
    2 lb. fresh spinach, stemmed, well washed and dried
    1/2 lb. mushrooms, thinly sliced
    1/2 lb. bacon, cooked and crumbled
    3 hard-cooked eggs, sliced
    1/2 lb. cherry tomatoes, halved if large
    1 1/2 Tbsp. white wine vinegar
    1 tsp. Dijon mustard
    1/8 tsp. salt
    1/8 tsp. freshly ground pepper
    1/4 c. light olive oil
Preparation
    In a salad bowl, combine spinach, mushrooms, bacon, eggs and tomatoes.
    In a small bowl, combine vinegar, mustard, salt and pepper.
    Whisk in olive oil until well blended.
    Pour dressing over salad and toss to coat.
