Mexican Cornbread - cooking recipe
Ingredients

1 c. yellow meal
2 eggs, well beaten
1 c. sweet milk
1/2 tsp. soda
3/4 tsp. salt
1 (No. 303) can cream-style corn
1/2 c. bacon drippings
1 lb. ground meat
1 large onion, chopped fine
1/2 lb. grated cheese
4 jalapeno peppers, chopped
Preparation

Mix meal, beaten eggs, sweet milk, soda, salt, corn and bacon drippings; set aside.
Saute ground meat; put on towel and dry. Grease large iron skillet; set aside.
Pour 1/2 of batter in skillet.
Sprinkle cheese, meat, onion and peppers evenly on batter.
Pour remaining batter on top.
Bake at 350\u00b0 for 45 to 50 minutes.
